Sous Chefs Job Description:A Sous Chef or sometimes called the Second Chef is the person who is directly responsible to the Head Chef in a kitchen. The Sous Chef is usually second in charge of the kitchen and will replace the Head Chef in his / her absence. Depending on the size of the kitchen there can be just one Sous Chef or perhaps 4 or more Sous Chefs working in the team. Sous Chefs normally have a hierarchy similar to this when working in a larger brigade, in order of highest to lowest rank:
The main reason the there more than one level is that some kitchen might have 50 or more chefs working in them and they will need to be strong management in place. With the 4 positions, management is made easier when running a potentially large brigade of chefs. Also they might have slightly different sections to work on with responsibilities such as restaurant, afternoon tea/room-service and also banqueting to deal with. The next stage in a Sous Chefs career will normally be a Head Chefs position. It can sometimes take a long time to reach this position in a high quality environment and may take up to 15 years to reach this level.
