Pastry Chefs Job Description:

A Pastry Chef is a chef working in the pastry section of a kitchen and is responsible for producing the sweet course on a menu. The products range massively from more simple plated desserts to full on sugar and chocolate show pieces. Generally the pastry chef will work in a team of pastry chefs under the authority of a Head Pastry Chef.

Depending on the size of the operation, the team can range from a single person in a small restaurant through to a team of perhaps 15 pastry chefs in a large hotel and sometimes more within a contract catering company. The pastry team usually work in a pastry section within the main kitchen but in some places they may have their own separate pastry kitchen. Some say being a pastry chef is more of a science as it often involves mixing more complex ingredients and timings are crucial as to the success of the end product.

Pastry chefs will usually either be trained within creating a more restaurant type plated dessert product or will be trained in patisserie. Classic patisserie is a very different type of pastry work where the candidate will be more likely to work in a Patisserie (Bakery) than a restaurant type kitchen. Patisserie and pastry products range widely from country to country so often when a candidate is relocating for a new job they will have to learn new product skills.
